Dried beans were a staple in our house. When I left home after graduating from high
school and junior college I vowed to never eat another lima bean as long as I lived. I held that
vow until one day a few years later I woke up craving a big bowl of soupy, hot lima beans. I
went out and bought a package of Dixie Lily large lima beans and prepared them that night.
They were very good. Rice was also a staple. Taking a can of tomatoes and pouring it over rice
then adding a can of corned beef or crumbled up bacon was a full meal when you added some
homemade biscuits or cornbread.
If we complained that we were "starving" at night and there was nothing in the house to
eat Mama could go into the kitchen and magically provide us with a snack. I can remember
Mama spreading margarine on bread, sprinkling a spoonful of sugar on the buttered bread,
then adding a couple of pinches of cinnamon and toasting the concoction in the oven. Presto!
We had a snack fit for a king.
There were a few times when I would come home from school and Mama would tell me that
if we wanted something to go with our lima beans and rice for supper I had better go catch a
mess of fish. I was always glad to do that and in those days it was as easy as getting out your
